Another personal favorite of mine is this, The Sleeping Beauty.  One of the world's most famous fairy tales is given a lovely adaptation here.  The sets and costumes have a very Russian style, which works surprisingly well.  Those familiar with the tale will still find several new twists and interesting subplots.

Bernadette Peters plays two roles: that of the perfect fairy-tale princess (who looks like a doll and sings beautifully), and also a sultry Middle-Eastern princess who goes after the prince.  She was stunning in the first role and hysterical in the second.

Christopher Reeve, still at the height of his Superman fame, looks gorgeous and is the perfect Prince Charming.  He is also nearly unrecognizable as a rival for the Princess's affections (seriously, it was years before I realized that was him!)

Rene Auberjonois makes another appearance as a king, and is clearly enjoying himself.  Beverley DeAngelo and Carol Kane are perfect foils as the fairies and the script is so beautifully written that there is not a boring moment in this film.  Lovely adaptation.

WOODSMAN: Once upon a time, in a land far away, there was a handsome woodsman, hard at work.... That's me.

GOOD FAIRY: Someday a prince will come.

PRINCE: Too beautiful. You're too pure and too good. Do I dare to wake you to reality? Or am I dreaming now?

GOOD FAIRY: Good luck, Princess. Between you and me let's just hope there's a prince out there with more courage than brains.

GOOD FAIRY: You know something Henbane? For a good fairy, you're really not very nice.
